You know the end of the week feeling when the fridge isn’t showing much promise? Yep, me too and today I was faced with what to have for brunch when faced with some leftover rice and stir-fried veggies from the night before.
I fancied something with eggs (it’s been an egg week this week) and I came up with what turned out to be something much nicer than I imagined. Let me introduce the Spicy Fried Ricelets!
I had some left over cold rice that had been coated in some cumin and coriander paste from the night before and some cold, flash-fried veggies which consisted of some onions, carrots, spinach, peas and sweetcorn.Ā
I whisked together two eggs, seasoned with salt and pepper and a generous shake of Tabasco sauce and dolloped in a generous serving of rice and vegetables until the egg mixture was thick.
I cooked them by using a tablespoon of mixture in butter, although you could use coconut oil too and once the egg had formed a nice base, flipped them over and cooked the other side.
They were incredibly tasty and if you like Special Fried Rice then you’ll like these too. They could be eaten hot or cold and they really do give great new lease of life the those annoying bits of leftover rice that is too much to serve up, too wasteful to throw away and too little to make into another meal in the freezer.
