It\u2019s a real favourite in the Strickers household.<\/p>\n<p><span style=\"text-decoration: underline;\">Fresh Tomato Soup\u00a0<\/span><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>10 \u2013 12 tomatoes (the riper the better)<br \/>\n1 bulb of garlic<br \/>\n2 red onions (white will do, but red are better)<br \/>\n2 litres of homemade or good quality stock (chicken works well as does gammon or vegetable)<br \/>\n1 tbl sp coconut oil<br \/>\nFreshly ground black pepper<br \/>\nSea salt<\/p>\n<p>Pre-heat your oven to 190C, 375F, gas 5.<\/p>\n<p>Wash and cut you tomatoes in half.<br \/>\nPeel the garlic cloves.<br \/>\nPeel and slice the onions.<br \/>\nPlace the tomatoes cut side up on a baking tray, sprinkle the garlics and onion over and around the tomatoes. Dib bits of coconut oil over the veggies. Season well with salt and pepper.<br \/>\nBake in the oven for 30-40 minutes so that the onions start to tinge and the tomatoes are well cooked.<br \/>\nTransfer all the vegetables into a large pot with the stock in and heat through.<br \/>\nWhizz with a blender.<\/p>\n<p><span style=\"text-decoration: underline;\">Option:<\/span><br \/>\nWhen cooking the tomatoes lay slices of streaky bacon on top of them. Before transferring to the pan, remove the bacon and save for chopping and topping on the whizzed up soup.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>So I bought all those tomatoes from Woky Joe because I just love this soup.
