Vinegar Cake

225g Organic butter
450g Spelt flour
500g mixed fruit and peel
225g sugar (light, soft, brown best) but any will do
1 teaspoon bicarbonate of soda
300ml coconut milk, or milk substitute
3 tablespoons malt vinegar


Pre-heat oven to 200 c / 400F / gas 6

Grease and line a 9 inch / 23cm round cake tin. I’ve managed in a 7inch tin, you just get a taller cake!

Mix butter and flour together in a mixer. Turn into a big bowl, add the fruit and sugar and mix well.

Add bicarbonate of soda to milk, then add vinegar, it will start to froth. Pour into the dry mix immediately and stir together so all dry mix is combined.

Turn into the tin. Level the top. Bake for 30 minutes, then turn heat down to 170c / 325F/ gas 3. For about 1.5 – 1.75 hours. Remove from oven when a skewer comes out clean.

Leave in tin for half an hour or so, the remove from tin to a cooling rack.
